Apples Galore...

 I am up to my eyeballs in apples!  Between mom, my sister and I we have 7 apples trees to gather and process.  These apples came from my sister's.  This box is huge, it is a big sink box that I saved for this.  We have apples in boxes, buckets and anything else that will hold them. 
 These are going to be jelly, apple butter, apple sauce, and some in the freezer for fried apples and apple pie filling. 
 Like my grandmother that did not waste anything, we are saving the good parts of the apple peelings for jelly. 
 And last but not least...I also put up a bunch of corn! 
 So my day is filled with apples!  Anyone have any good simple apple recipes that they would like to share with me?  My sister made a batch of apple dumplings the other day with Mt. Dew.  We love those things.  I try to make them for every holiday dinner because everyone in the family loves them.

It looks like way more work than I want to put forth today. What a good feeling getting all those apples processed though. It sure will be nice when the cold winds are blowing!

I am waiting to see what my sister's apple crop looks like at their farm in upstate Pennsylvania. Two years ago we nearly lost our minds trying to process all the apples. Last year they didn't have even one apple in the entire orchard due to a late spring freeze. I have no idea what to expect but if we do have apples, there will be applesauce, apple butter and apple pie filling. We have never made apple jelly (which is a favorite of mine) so now that you have mentioned it, I am getting a hankering for some!

That is so much work, Kristie. Mostly I make applesauce with the apples we get from my Dad's and DH's aunt's trees. Then it becomes muffins, breads, cakes and cookies

Grandpa's Apple Crisp (Crumble)

Ingredients

4 -5 apples, sliced
1/4 cup water
1 cup brown sugar
3/4 cup quick oats
1/4 teaspoon cinnamon
1/2 cup butter
1/2 cup flour

Directions

Put apples in buttered 9x10 baking dish.
Sprinkle with water.
Make topping: rub together sugar, oats, cinnamon, butter, and flour.
Put topping on apples.
Bake 40 minutes in 350 oven.
Best served with pouring cream.
